You know what’s great about makgeolli? You can make it yourself!  What we have been hearing ever since we began Makgeolli Mamas & Papas, is that people all over are homebrewing and having great successes!  We ourselves are no homebrewing experts, but the whole goal of MMPK is to share as much information as possible and connect all makgeolli lovers from expert to beginner.

So we have compiled our first list of links and resources to connect you to the world of homebrewed makgeolli!!  There are recipes, forums and diary blogs to get you started on your own makgeolli making project.  This is a work in progress, so if you have a blog, know a brewer, or have a recipe….don’t forget to send us an email at [email protected] or comment below and share, share, share!!

Makgeolli Homebrew Resources

Makgeolli is surprisingly easy to make yourself, and there is a growing community of people who want to try it out for themselves.  The advantage of home brewed makgeolli is that the fermentation process is not as long as other alcohols, so you can get brewing, drinking and perfecting your recipe much faster!

We don’t have the definitive  recipe or method for home brewing makgeolli, but we have trawled the internet to get the best resources out there as possible.   As with most home brewing endeavors, it’s all about personal taste and experience!

How-to Guides and Recipes

Harmsboone – This site has a comprehensive walk-through of the step by step process of makgeolli making.  It also has some good background info, it’s a great place to start if you are a complete newbie to the makgeolli making process.

Homebrew Talk – This is a great resources not only for recipes but also as a forum for people with questions or experiences.  It also has a recipe for ‘White Fire Makgeolli’.

Seoulful Kitchen - For something a little different, this site has a recipe for a Sweet Potato Makgeolli with good documentation of her experiences.

Homebrew Korea – Although this site is mostly all about expats in Korea brewing beer, there is an interesting account of the founder’s experience with using a makgeolli home brew kit he bought online.

Forums

Northern Brewer - This forum has a lot of comments on the ins and outs of makgeolli home brewing.

Homebrew Talk – As mentioned above this is a good forum for people who have tried different recipes, but also has good tidbits of information such as where to find ‘Nuruk’ or ‘Nuruk’ substitutes, as it can sometimes be hard to find outside of Korea.

Expat Blogs

Babobrewing A very recent account of one expat’s experiences as he tries making makgeolli from start to finish.

Groundsquirrel - Also another great step by step chronicle of how one expat tried her hand at the makgeolli home brew.

Onthepovertyofbrewinglife - One expat from Daegu documents his makgeolli making, and has become a regular brewer.

Nouveau Trad- An account of an expat’s experience at the very awesome Susubori Academy.  Susubori is run by our longtime mentor and biggest supporter Jo Hyojin (affectionately known to Mamas & Papas as Dr. Makgeolli).
