Adidas carries their gear in Busan but they are likely to pull their merchandise soon for the off-season.

I don't know about the stadium stores but in case you don't get any answers about their hours:
Lotte Centum has a small Giants shop that's open year-round. It's on B2 in the back left corner. They sell pretty much the same things as they do at the stadium (hats, jerseys, etc.). I'd assume the other Lotte stores would have Giants stuff, too. You can also get Giants stuff on GMarket.

I went there Saturday 10/2 and they were open so they should be open daily during the season. The off-season would be another issue to explore.
