Protein Bread

What do you do when you’ve run out of protein powder and you want something other than meat post workout?

You make protein bread!!!

This turned out to be a happy surprise- I didn’t really know what the result would be, but it was definitely a winner!

I am happy to report that it did! I subbed chia seeds for the powder, and it worked beautifully. It also gave a nice little nutty crunch texture which I really enjoyed.flaxbread (5 of 9) flaxbread (6 of 9)

Protein Bread

Ingredients:

1 1/2 cups egg whites
1 tbsp (15grams) chia seeds
1 packet stevia (or sweetener of choice)
1/2 tsp guar gum
1/2 tsp xantham gum
1 tsp vanilla
1/4 tsp baking powder
1/4 tsp salt
sprinkle of lemon juice

Method:

1. Beat egg whites with salt until soft peaks form. Sprinkle some lemon juice and continue to beat until stiff peaks. Sprinkle in dry ingredients, beating well.
2. Spread onto parchment lined trays. Bake at 350 for 10-15 minutes until golden on top and done. Careful that you don’t burn the top- it rises a lot in the oven!

If you don’t have chia seeds, I think flax seeds would work.

Also, you don’t have to use as much egg whites as me, I’m sure this would work with less.
