Naked Roast Kabocha

This recipe is so simple that it didn’t even really need to be created… but I wanted to share this anyways, because it’s actually one of my favourite ways to enjoy kabocha, and it’s just so easy!!

And okay, it’s not completely naked, because I do like to sprinkle a bit of lime or lemon juice and some sea salt on top, but I’m calling it naked because its roasted sans oil. Yep- no spray, no nothing, and it’s still delicious! Of course you can add oil, but I prefer to eat it like this.

And because of my super exciting gmarket find, this recipe is super fast now that I can buy  cubed, frozen kabocha.. hee hee..

Ingredients:
Cubed kabocha squash (or other winter squash, pumpkin or sweet potato)
Salt
Lemon or Lime Juice
Lettuce leaves for wrapping

To do:
Preheat oven to 350
On a parchment lined baking tray, add cubed kabocha (or winter squash or pumpkin of choice.)
Roast 25-30 minutes, stirring once halfway
Sprinkle with citrus juice and salt.
Wrap in lettuce leaves as you enjoy!

That’s it! Next, I like to eat it with a huge pile of fresh lettuce:

And I add: (if you have fresh citrus juice- go for it!) Lime, lemon and orange are all delicious.

and

Other spices I might use are cinnamon, all spice, ginger, chilli powder.. you can play around.

And now for the fun part-

maybe it’s my Korean influence, but this is my absolute favourite thing to do- take those naked kabocha pieces and clothe them!!!
