Grain Free Apple Cinnamon Yeast Bread

Hello out there! I’m super excited to get back to recipe making and blogging! I’ve been trying not to go too crazy but there are just so many things I want to try!! applebread (22 of 27)

One thing I really miss is yeasty bread. Make it crusty, seedy, yeasty bread and you really got me! Alas, this isn’t your typical yeast bread, but you know what- it does taste delicious! I got the idea after seeing some recipes over on Foodie Fiasco- Kelly has some awesome stuff. But I’ve changed it up to make it single serving, and more suited to my macros.applebread (17 of 27)

I wasn’t sure if I should just use yeast, or also add baking powder, so I made two batches. I found that the addition of baking powder made the bread rise more. It doesn’t raise alot- its more like a flat bread, as you can see in the pictures, but that’s okay with me. And I also tried waiting 30 mins before baking it- to see if it would rise. Nope. It was the same. So you can just go ahead and bake it right away. That makes it a pretty quick recipe. AND you don’t need anything fancy- I just used a fork for mashing and mixing. So simple!!

Also, I didn’t have any applesauce at home, so I just made my own. I have a recipe for applesauce here, or you can just do a mini version, which is what I did for this recipe. Also, you can certainly double or triple the recipe if you want to make a bigger batch. But I know that sometimes its nice just to have single serving things- that way its not a huge investment if you don’t like the recipe right? Not that you wouldn’t ;)

Grain Free Apple Cinnamon Yeast Bread

Ingredients:

1/8 cup water, warmed in microwave
1 tsp active dry yeast
100g apple (about 1/2 a med apple), frozen+microwaved, mashed
1/2 tsp baking powder
18g (2 tbsp) coconut flour
10 g (1 tbsp) chia seed
1/8-1/4 tsp guar gum
1/2 tsp cinnamon
1/4 tsp sea salt
1/4 tsp vanilla
1 egg white
***if you want a sweeter bread, add 1 packet of stevia or sweetener of choice

Method:
1. Add yeast to warm water and dissolve, let sit about 10 mins.
2. Mash apple and stir in yeasty water, chia seeds then dry ingredients. Add egg white last.
3. Spread on parchment paper, bake at 350 for 8-10 mins or until golden. (Oven times may vary- so check it!).
4. Enjoy!

Serves 1. Calories: 187 Carbs: 31g Fat 7g Protein: 11g Fiber: 16g
