The Not So Best Chicken in The World+ An Update

This post was supposed to be about chicken. My plan was to make the best pre-contest competitor chicken recipe that I would love and love and love and be more than happy to share- but it isn’t. Or wasn’t. I mean I did make chicken this weekend, and I took photos and everything- but the recipe was in no ways amazing. No ways. So I’m not sharing it. I didn’t start a blog just to post any recipe that I used, just for the sake of posting.

So I’m writing this post to share an update.

It’s been a little challenging keeping up with a food blog lately because I’ve actually been doing everything I can to keep my mind off food. I’ve been dieting since January, and I have to say, especially now that I’m less than 2 weeks out from my show, my food is really not exciting nor share-worthy.

What is a healthy diet?

This is such a challenging subject it seems. And yet it isn’t. But what makes a healthy diet is still such an area of confusion to so many people. And even when you follow your version of a healthy diet- is it really that?

I thought I would share my thoughts on diet. As a person who has been very food focused for many years, I’ve definitely read a great deal, experimented a lot, and am still finding myself frustrated and confused.

However, right now, and since I hired my coach, I feel better than I have all year. Do I look better? Well I still don’t feel as lean as I like to, but my show is still 6 weeks away and slowly but surely I am getting there. Before I go into what I’m doing now, I’ll share some of the things I’ve tried. And keep in mind, that although these things have worked for weight loss, they haven’t been very good for health or performance.

Curried Chicken with Creamy Veggie Puree

I sort of have a love hate relationship with chicken.

Chicken+puree (35 of 44)

It’s one of those foods that is usually safe to get when you eat out, and is pretty readily available, both positives. Also, it fits into my meal plan on both rest days and training days, so its easy for me too cook a big batch and be able to eat it every day of the week. However- whenever you end up eating something over and over and over… you can get pretty sick of it.
