Copy-Cat Paris Baguette Chicken Wrap

In this recipe, I  re-created the Thai Chicken Wrap from Paris Baguette.  It is my favorite quick meal if I can’t find anything else.  Here in Korea, Paris Baguette is as common as Starbucks in America.   These wraps are very easy to make at home!

Ingredients

For the breaded chicken:

-2 chicken breasts

-6 to 8 saltine crackers, smashed (I used multigrain ones)

~25 almonds, crushed

-1/4 tsp salt

1/8 tsp pepper

-1 egg

-2 Tbls flour (I used whole wheat)

For the wrap:

~2 cups spinach, washed and dried

Ingredients:

-1 whole grain English muffin

-1 egg (use 2 egg whites if watching your cholesterol)

-salt & pepper

-2 slices thin ham sandwich meat (preferable natural or low-sodium kinds)

-1 Tbls shredded cheese or 1 slice of cheese, any kind you like

-1 tsp ‘I can’t Believe it’s not Butter’ (or other butter spread)

Chicken Caesar Wrap

This is a light and fresh way to start the new year.  With a homemade low-fat Caesar dressing – that’s better than store-bought, fresh greens, and protein rich chicken breasts, this recipe won’t disappoint.

Ingredients:

-2 chicken breasts

-1/2 tsp olive oil

-salt & pepper

-2 cups salad greens ( I used green leaf and spinach)

-1/2 cucumber, peeled and sliced (optional)

-2 Tbls parmesan cheese, grated (fresh is the best, but I used the canned kind)

-Croutons or French’s Fried Onions (optional, for added crunch)

With only 3 ingredients, this simple latte tastes like the ones you get at coffee shop.

Ingredients:

-1 tsp green tea powder

-2/3 cup milk ( I used low-fat)

-3 tsp honey

Directions:

1) Mix the green tea powder and honey with about 2-3 tbls hot water.


Super Easy Pumpkin Spice Latte

This super simple recipe uses instant pumpkin tea and coffee mixes to create my favorite cold weather coffee-shop specialty.

Ingredients:

-2 packets Maxim 1/2 calorie coffee mix (Mocha Gold or Original)

-1/2 packet Korean pumpkin tea mix (I found it was too thick if I used a whole packet)

-1/4 tsp cinnamon

-a pinch (1/16) tsp nutmeg (if you can find)

-1/8 tsp ground ginger

-1 tsp instant coffee granules (optional- if you want a stronger coffee flavor, which I like)

-2 Tbls milk (optional, adds a richer flavor)

- 200 ml (just over 3/4 cup) hot water

Honey-Garlic Teriyaki Sauce

This homemade teriyaki sauce has a balance of sweet and salty.  It has a thick syrupy consistency, unlike some store-bought kinds that are thin like soy sauce.  It is perfect as a marinade or as a dipping sauce.  I like to serve this sauce with  Steamed Mandu & Veggies (Korean dumplings).

-3/4 cup soy sauce (low-sodium preferred)

-3/4 cup rice wine

-1/3 cup brown sugar

-2 Tbls honey

-1 Tbls soybean paste

-1 Tbls sesame oil


Mexican Chicken Casserole

Corn tortillas are layered with shredded chicken, salsa, and beans then topped with cheese in this satisfying quick and easy recipe.

Ingredients:

-4-5 corn tortillas

-2  chicken breasts (or some leftover rotisserie chicken)

-1/3 cup salsa, any kinda (I used Pace)

-1 container (85 g) Denmark plain yogurt

-2 Tbls +1 tsp taco seasoning, divided

-1 can pinto or black beans, drained

-1/2 tsp black pepper

-1/4 cup shredded mozzarella or monterey jack cheese

*If using cooked rotisserie chicken, proceed to step 3


Trail Mix Treats

 

These are similar to rice krispie treats, but I made them a bit healthier by using bran flakes and peanut butter instead of rice krispies and butter.  I had a plentiful amount of ingredients you would find in trail mix plus marshmallows that needed to be used soon, so I decided to make trail mix treats!


Homemade Butterfinger Bars

Trick or Treat!  Halloween is just around the corner.  I bet you can’t find a butterfinger in Korea, but now you can make them!!!!  This 5-ingredient super easy recipe will blow you away.  Not only does it taste like a butterfinger, it’s better for you with no high fructose corn syrup or artificial ingredients.

Ingredients:

For the Bars

-1/4 cup agave nectar, honey, or maple syrup (I used agave nectar)

-1/3 cup dark brown sugar

-a pinch of salt (1/8 tsp)

-3/4 cup creamy peanut butter


‘Canned’ Pumpkin

Canned pumpkin is vital during the holidays back in the U.S.A.  It is hard to find and expensive in Korea.  So, I decided to make my own using pre-peeled and sliced pumpkin/squash from Costco.  One 900 g container will yield about 3 (15 oz) cans of mashed pumpkin ready for use in my Chocolate Chip Pumpkin Bread or anything calling for canned pumpkin!

Servings: yields about 4 1/2 cups of mashed pumpkin
