Simplest Vegan ‘Ice-Cream’ Ever

All you will need is:

Two large ripe banana’s, peeled and chopped then frozen overnight.

1/2 cup – 3/4 frozen raspberries or blueberries.

Toss them into a strong blender while still frozen and pulse a few times. Pause to scrap down the side and mix up the frozen and blended fruit. You will need a strong arm and patience to get the perfect thick ice-creamy texture.

I like mine in a tall glass with blueberries (for breakfast) or with a slice of vegan cake for desert.

Dig Indian cuisine? This popular snack can be found in India, Tibet, Pakistan and Nepal. I’ve tinkered with this recipe to reduce the oil and fat content, but retain the flavour. They travel well, are good hot or cold and are very filling.


Vegan Pizza? Yes Please

Whenever I order pizza sin cheese, I’m met with furrowed brows and a hovering symbolic question mark. “What do you mean, without cheese?” So I was determined to find the best vegan pizza to prove than cheese is not necessary.


Roasted Capsicums Stuffed With Mushroom, Spinach and Quinoa

Mushroom, Spinach and Quinoa Stuffed Roasted Capsicums 

Capsicums stuffed with mushrooms, carrots, spinach, quinoa and cashews. Choose a combination of sweet red, orange and yellow capsicum (bell peppers) as they taste better and look glamorous.

Serves 4 large capsicums     1 hour 30 mins total


Coconut Macaroons

Oh my word these are good. Seriously simple to make, these biscuits take about 40 minutes including cooking time. You may vary the recipe by adding some cocoa to the dry ingredients or for a super sugar hit, dip the macaroons in melted chocolate once they’ve cooled. They will keep for a week, if they last the night.

                          Yield: 16 cookies    Time: 40 minute  


Vegan Chinese Spring Rolls

Chinese Spring Rolls are delicious. Crispy on the outside they burst with flavour and texture as you bite into them. They are great as a side dish or as nibbles at a gathering and are surprisingly easy to make. As a bonus, they contain much less fat than store bought spring rolls and can be made vegan with tofu in place of shrimp and by making your own rolling dough. This recipe will yield 15-20 spring rolls depending on how tight you roll them, which is the real art to these tricky little delights. Prep Time: 35 minutes          Cook Time: 10 minutes                     Total Time: 45 minutes Add 1 1/4 if you’ll be making your own spring roll wrappers from scratch (easy to do).


Lentil Soup

Lentils deserve more praise. Lentil soup is one of those recipes that should be in every cook’s repertoire. They’re available in most grocery stores and are high in protein, healthy and very cheap. This dish has proven to be my favourite as it’s so easy to prepare and difficult to mess up. Enjoy this traditional and warming dish.

 Prep time: 10 mins, Cooking time: 20 – 50 mins (depending on your lentils)

Ok, so you’ve made it! You have gone through all the paperwork and hard work it takes to get yourself overseas and to the start of your new adventure!! You have been busily embracing the culture and it’s cuisine and enjoying every minute of it! The only thing is you are starting to miss home, just a little. It’s summer in Korea and tomatoes are everywhere! I love tomatoes but its way too hot to cook with them now so what better way to use them then to make this Spanish favorite, Gazpacho! This cold soup is delicious and hits the spot on a hot day, but I wanted something on the side to make this dish a little more filling. Something a little salty to go with that tomato flavor and something healthy. Then I remembered an episode of Top Chef that made Popcorn Cakes! It’s a perfect match.
